Ingredients

  • Natural peanut butter
  • Rolled oats
  • Oat flour
  • Coconut sugar
  • Egg
  • Vanilla extract
  • Baking soda
  • Sea salt
  • Maple syrup


Instructions

  1. Preheat your oven to 375°F.
  2. In a large mixing bowl, combine the peanut butter, coconut sugar, and whisked egg until smooth.
  3. Add the vanilla, rolled oats, oat flour, baking soda, and a pinch of sea salt, stirring until a thick dough forms.
  4. Scoop the dough into 1/2 tablespoon portions, roll into balls, and place them on an un-greased baking sheet.
  5. Gently press down on each ball and bake for 8-10 minutes until the edges are lightly golden.
  6. Allow the cookies to rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
